Cajun Meat Loaf

The pork is not necessary, but it adds some flavor.

  • 1 large onion
  • 4 scallions
  • 2 celery stalks
  • 2 Anaheim chiles
  • 2 jalapenos
  • 6 garlic cloves
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon cayenne
  • 2 teaspoons ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1/2 teaspoon nutmeg
  • 2 bayleaves
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup tomato sauce
  • 1 1/2 pounds ground beef
  • 1/2 pound ground pork
  • 2 eggs
  • 1 cup dry bread crumbs

Finely chop the onion, scallions, celery, and chiles (with the seeds); peel and mince the garlic. Melt the butter in a large pan with the oil over high heat. Add the vegetables, spices, and Worcestershire sauce. Sauté until the vegetables have softened. Add the tomato sauce and cook for several minutes more. Discard the bay leaves and allow the mixture to cool.

Mix the meats with the cooked mixture in a bowl. Add the eggs and bread crumbs and mix thoroughly. Form a loaf and bake at 400° F. for forty-five minutes.
