Indian Cucumber Salad

  • 4 large cucumbers
  • 1/2 cup roasted peanuts
  • 2 serrano chiles
  • 1 lemon
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons oil or ghee
  • 1 tablespoon cumin seeds
  • 1 tablespoon mustard seeds
  • 1 bunch mint

Peel and halve the cucumbers and scoop out the seeds. Cut each half in half and slice into 1/2-inch pieces. Chop the peanuts and mince the chiles. Mix the cucumbers, peanuts, and chiles in a bowl with salt, sugar, and lemon juice.

Heat the oil in a small pan and toast the cumin and mustard seeds over medium heat for several minutes. Pour over the salad, add chopped mint, mix, and chill.
